Dark Chocolate & Cranberry Granola Bars




Ingredients

  • Dark Chocolate Chips
  • Dried Cranberries
  • Chopped Pecans
  • Peanut Butter
  • Honey
  • Granola



Directions

Melt peanut butter in microwave and set aside to cool, in a large bowl using a spatula combine honey, chocolate chips, pecans, granola, and cranberries. Once the peanut butter has cooled add to ingredients and mix well. Line a sheet pan with foil paper and spray with non stick spray, place in a 350 degree oven for about 20- 30 min.

Egg White Muffins

Ingredients

  • Carton of Egg Whites
  • Basil
  • Tomatoes
  • Spinach
  • Turkey
  • Sea Salt 
  • Black Pepper
  • Parsley
  • Parmesan Cheese



Directions

In large bowl mix Egg Whites, Salt & pepper, and Parsley. Prepare oven and pan heat pan to 350 and spray a muffin pan with non stick cooking spray and set aside. Chop your basil, turkey, tomatoes, and spinach as well as grate your cheese. Pour egg white mixture into prepares muffin pan and evenly distribute your other ingredients into each muffin. Bake for 30 Min. or until desired doneness. This is a recipe that can be personalized to desired measurements and flavors so by all means add or take away whatever you like! Send me your variations

2 Week Clean Eating Challenge: Grocery List and Day 1 Meal Plan


When I began my grocery trip today I had all intentions of shopping for the entire two weeks at once but with the crowd of people and the time crunch I was on I decided to only shop for this week. It worked out because i got great values on everything I purchased and I Know my items will be fresh!

2 Week Grocery List
( Depending on the size of your family and storage capacity you may have to alter the quantity of grocery and or make one trip to the grocery store a week)

  • Frozen Fruit ( mixed berries, peaches, pineapple, mango) Look for no sugar added
  • Plain Greek yogurt
  • Spinach
  • Kale
  • Cucumber
  • Stevia
  • Carrots
  • Plain Oatmeal
  • Honey
  • Skim Milk
  • Whole Grain Cereal ( Cheerios, Honey Nut Cheerios..Etc..)
  • Tomatoes
  • Basil
  • Large Turkey Breast
  • Egg Whites
  • Chicken Breast
  • Broccoli
  • Parmesan 
  • Dark Chocolate
  • Dried Cranberries
  • Granola
  • Pecans
  • Izze Juice Drinks
  • Smoked Chicken (store prepared)
  • Romaine Lettuce
  • Whole Wheat bread
  • Whole Wheat Sandwich wraps
  • Pita
  • Fresh Fruit ( Strawberries, Apples, Bananas, Grapes, Pears
  • Turkey Sausage


Breakfast

2 Egg White Muffins
1 small piece of Turkey Sausage
8oz Glass of Orange Juice

Lunch

Smoked Chicken w/ Garden Salad and olive oil/lemon juice dressing
fresh fruit
Drink of choice Izze ( Carbonated Juice)

Snack

Dark Chocolate Cranberry Granola
Water

Dinner

Smoked Chicken w/ Broccoli 
Water

As you can see Day 1 was a very light day but I must honestly say very filling. While grocery shopping I found a whole smoked chicken at a great price. As you can see we ate off of this for both lunch and dinner and we still have leftovers which I will probably make into something else. I also purchased a large turkey breast ( the kind you might purchase for a small holiday gathering ) I prepared it very simply with salt and pepper and popped it in the oven for 1hour and we will be using that for sandwich meat, dinner, and even breakfast just stay tuned!

2 Week Clean Eating Challenge


Recently My husband and I both have been very concerned with the amount of salt and  highly fatty, proceed foods we consume daily. So last night we committed to a two week challenge to eat heather and cleanly. Now this will  be a challenge for us as our entire family loves things like butter, salt, condiments, sweets oh and especially McDonald's! Being that in High School and my first year of college I was very physically active and heath conscious I'm very equipped for this challenge and I'm sure that the training I received then will help me with this challenge so lets begin with my definition of Clean Eating:

Clean Eating: No processed foods, No large amounts of salt and be mindful of spice mixes that contain salt as well. The More Veggies and Fruit the better! lean meat, plenty of water, and careful with things like fruit juices, soda and sugary veggies also lets 86 the alcohol for these two weeks!

Grocery Tips: Buy local! Since stores like whole foods aren't always in my weekly budget I buy local as much as I can and I'm fortunate enough to have an awesome neighborhood grocery that can tell us with confidence where our grocery items come from and always has fresh and safe produce as well as meat.  Before you go shopping be sure you have eaten and make a list this way you will be less likely to splurge on the things you don't need.

Now I'm not into flavorless food! I'm from South Louisiana and I promise I won't eat it if it isn't good!! (and occasionally covered in Hot Sauce) So don't be afraid the daily meals will not be bland or disgusting I promise! 

Starting Today I will post my Grocery list for the two weeks as well as daily I will post the meal plan. So with all that said I'm getting up and getting ready for my grocery trip.
